Yummy in my tummy…

Tex Mex Chicken and Zucchini

Tonight I made a delicious new recipe, Tex Mex Chicken and Zucchini. Too yummy not to share. It was easy, cooked in one skillet and like I said delicious!!

INGREDIENTS

  • 1 tbsp avocado or coconut oil (I used coconut oil)
  • 1 medium onion, finely chopped
  • 3 large garlic cloves, minced
  • 2 medium bell peppers, chopped
  • 1 lb boneless and skinless chicken breasts, cut into 1″ pieces
  • 1 cup of frozen or fresh corn
  • 2 large zucchini, diced
  • 14 oz can of black beans rinsed and drained
  • 1 can of Rotel
  • 1 pack of taco seasoning
  • 1 tbsp cumin, divided
  • 1 tsp salt
  • shredded cheese to top
  • ground black pepper to taste

INSTRUCTIONS

  1. Preheat large deep skillet on low- medium heat and swirl oil to coat.
  2. Add onion, garlic and bell pepper, saute for 3 mins
  3. Move veggies to the side of the skillet and add chicken. Sprinkle with 1 tsp of cumin, salt and black pepper. cook for about 5 mins
  4. Add corn, beans, Rotel, zucchini, taco seasoning and remaining cumin. Stir, cover and cook on low- medium for 10 mins
  5. Sprinkle with cheese, cover and cook for a few minutes until cheese has melted.
  6. Top with green onion and cilantro (I didn’t add this)

You could serve this over rice or quinoa, I didn’t since I’m TRYING to be good… this week at least haha-

A DECADE!

Happy 10th Birthday Pumpkin Head! I cannot believe it! My firstborn is 10 years old today! Gosh time really does fly by when you’re having fun.. She has amazed me from day one! I remember the night before she was due, a Sunday, we were watching the movie “I Love you Beth Cooper” and Jason said “Ok get to something and make this baby come I’m not going to work tomorrow!” So I got my big preggo self up and “ran” up and down the stairs lol! Maybe my 3rd-5th time up and down I had to go to the restroom- you know all that bouncing up and down on my bladder man… I honestly didn’t think anything of it, but as soon I sat down BAM! water broke! (TMI Sorry!) Things went great- it was a very smooth and easy delivery. On July 26th 2010 at 7:29 am our beautiful baby was born! Brayklee Emerson Roncek, weighing in at 7lbs 11.9 ounces and 20.5 in long! I can remember not knowing any details of her but trying to see the scale when they were finishing up with me and all I saw was 11.9. I almost freaked thinking she was an 11lb baby!! Big babies run in my family and hey it was my first I didn’t know hat to expect! She was perfect!

Every day since then has been such a blessing and adventure! She is the most caring, smartest, loving little girl I know-well besides my JayceeRae- I have been blessed three times with the most amazing kiddos! She is what you would call a Kidpreneur for sure! She has such big ideas already, I cannot wait to see when she gets older and really puts her imagination to work. We are so proud of her. I’m so glad the Lord made me her mom, we have a bond like no other- poor kid is just like me but at the same time just like her daddy its crazy. I miss her being a baby, but she will always be MY baby. At the same time I wish she could stay young forever, but I really look forward to the years coming. I hope she knows we love her to the moon and back and that she means the world to us.

“Not enough”

Kids they say the darnedest things… I hope I never forget the little sayings I have with my children- Jaxon is my sweet, sweet Momma’s Boy and I wouldn’t have it any other way! Lately when he’s being all lovie dovie he’ll ask “Mom how much do you love me?” Of course I come back with something BIG like “To the moon and back!”, “To infinity!”, “As big as the universe!!” well, when I tell him these answers he cuts me off and says “NOT ENOUGH!” – just as plain as day without change of facial expression and then keeps going on about his way. I love it, I love all his little jokes he plays on me. He just started adding today when saying not enough, “that’s like 4 inches” “NOT ENOUGH”- Sometimes he gets so mad and out of the blue he’ll say “why can’t I marry you! I wish Daddy didn’t so I could.” He knows it doesn’t work that way and sometimes he’ll say things like- Mom when my girlfriend is on vacation, I’m coming to your house to snuggle. He’ll ask if he can have one of my rings to give his girlfriend so he doesn’t have to buy one – haha I just love this little boy … I hope he always loves me this much.

Broccoli-Cheddar Cornbread

I made my daddy some Broccoli-Cheddar Cornbread for Father’s Day this past Sunday and thought I would share my recipe. It’s super easy and super yummy! Great to enjoy with a bowl of soup or chili or for a side to any meal really-

INGREDIENTS

  • 1 (10 oz) pkg. of frozen chopped broccoli, thawed and patted dry
  • 1 (8 1/2 oz) pkg. of Jiffy cornbread mix
  • 3 beaten eggs
  • 1 medium onion, finely chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup (1 stick) butter, melted
  • 1/2 teaspoon of garlic salt (I used Tony Chachere Creole seasoning on this one because my dad doesn’t like garlic)
  • 1/4 teaspoon cayenne pepper (I left it out since the creole seasoning already has a slight kick)

** You can also add Jalapeno peppers in this recipe and it’s so good!**

INSTRUCTIONS

  1. Preheat oven to 375
  2. Grease 8×8 in. square pan and set aside
  3. Combine cornbread mix with eggs, onion, cheese, butter, seasonings
  4. Stir in broccoli
  5. Pour mixture into the prepared panand bake for about 30 mins or until golden brown and cooked through
  6. Allow to cool before cutting into squares
  7. Enjoy!

Sub in a Tub!

Who love’s a good sub sandwich? This girl! My favorite kind is a turkey club sub…. yummo. Tonight it was just me and the girls and I didn’t feel like cooking so I through together a Sub in a Tub salad and it was a big hit! What are the ingredients?? Basically picture any sandwich you would get at a deli or make at home, think about the ingredients, throw them all in a bowl! BOOM! There you have it…Sub in a Tub! Tonight I used:

  • Romaine Lettuce
  • Green Bell pepper
  • Red Onion
  • Cucumbers
  • Mozzarella Cheese
  • Mini Pepperoni
  • Hard Salami
  • Pepperoncinis Peppers
  • Oregano
  • Salt and Pepper
  • Red Wine Vinaigrette

Today is June 7th, 2020. Granddaddy would have been 80 today! I miss that man so much. He was such a proud husband, father, GRANDDADDY, and pops. He loved his family so much, no matter where he went he always shared something about his family to someone. He knew just how many of us there are too, I still have to count who’s who and how many! Anything good we had going on in our life it was because of him ;-). We look good….because He made us lol… We have good jobs…because He told us…We made pretty babies… because again, it’s in his genes. He was so silly, and took credit any time he could. I still dream and think of him so very often. You know the saying if you see a red cardinal it’s someone from heaven visiting? Well we see them all over and the kids will smile real big and say “Pops came by today!”, “Hi Pops!”, “I saw Pops today!”, or I like it when I see multiple red birds… I always say “Granddaddy is showing us off again” I know he would be just as excited as I am about building our new home. I know he would be up there every chance he got just to check on the builders to make sure they are doing their job the right way, or to tell them how he use to build windows and doors and the projects he built. God, I really miss him. To celebrate him today I took the kids by Krispy Kreme, he loved KK donuts, and then went to visit his resting place. The kids and I shared stories and memories about him, ate too many donuts and just remembered him. OH! and we also left a star balloon that we signed (red of course) in his flowers. On the way back to the car I glanced up in the tree by his grave and guess what was there… a frog wind chime. He loved frogs for those who didn’t know… I wasn’t sure if Grannie hung it or not but thought it was super cool. Come to find out she didn’t by the way and it made it even more cool. Coincidences like this happen ALL THE TIME- I could already write a book about the little signs of Granddaddy; and I absolutely love it. I shouldn’t be surprised though… He’s not going to let us forget he’s always watching over us. Happy Birthday Granddaddy.

Chocolate Eclair- A No-Bake Winner!

Hey y’all! I’m sitting here watching t.v. and wanting something sweet, but trying to be good at the same time (ok I may have already had popcorn and 2 “two-bite” mini brownie bites) sooo I figured instead of baking or junkin- I’d share a favorite sweet treat of mine! Plus it’s super easy to make- a NO BAKE Chocolate Eclair. It’s one of my Grannie and cousin Austen’s favorite items I make, or at least they say they love it when I make it…This is a no-bake pudding dessert that’s so quick and easy to make–everyone loves it. I try to always keep the ingredients on hand in case I need a quick dessert. It’s best if it sits overnight before serving.

INGREDIENTS

  • 2 individual packages graham crackers
  • 2 (3 ounce) packages instant vanilla pudding mix
  • 3 cups milk
  • 1 (8 ounce) container frozen whipped topping, thawed
  • 1 (16 ounce) package prepared chocolate frosting

INSTRUCTIONS

  1. Line the bottom of a 9×13-inch pan with graham crackers. Keep a few crackers off to the side for later.
  2. In a large bowl, combine pudding mix and milk; stir well. Mix whipped topping into pudding mixture.
  3. Spread half of mixture over graham cracker layer. Top with another layer of graham crackers and the remaining pudding.
  4. Frost with chocolate frosting. I usually try and melt the frosting and pour over the pudding for an easier spread.
  5. Crumbled the graham crackers you pulled to the side all over.
  6. Refrigerate at least two hours before serving to allow the graham crackers to soften. Eat up!

Happy 75th Birthday Grannie!

This weekend we celebrated my Grannie’s 75th birthday! We would have had a bigger celebration if we were able to do more but with the world still “closed” from Covid-19 we just had cake and visited with her. I made her favorite per mom’s request a coconut creme poke cake. I think she had a good time, she was able to see almost all her babies and that always makes her happy. For one of her gifts, Jason and I put together a picture that said “Happy Birthday Grannie”. I think she loved it! I was very happy with it! I was able to get everyone to decorate a letter, take a picture of them holding it and then Jason put it together and we framed it in of course her favorite colored, yellow!

Grannie Filyaw is an amazing grandmother and always wants to do and take care of her babies. She has given us all our own special nicknames. I’m her Sweetheart, and my kiddos are Angel, Kitten and Little Fella. Any time we go visit she always tried to have a favorite snacks. When I was younger she would stock beefaroni and chicken noodle soup any time my cousin and I stayed. For my kids its banana popsicles and sugar popcorn. She makes the best and most comfortable pallets. I believe she is where I got my love of jewelry from, I can remember sitting on her lap in her chair and putting every ring on off her and twisting her bracelets, I swore she wore a ring on every finger. My Pop’s always had her set on jewelry, something new for every occasion- that’s the other gift I gave her for her birthday, but I can’t say what it is because she hasn’t received it yet- stupid mail- Well here’s to 75 years, 900 months, 27394 days, 657456 hours of being awesome and lots more to go!! Happy Birthday Grannie, we love you more than you can ever day, so ha!

Todd’s Buffalo Chicken Cheese Dip

What is your go to appetizer to make or take? Mine is Buffalo Chicken Cheese Dip! It’s quick, easy and so yummy ! Our good friend Todd would bring his delicious Buffalo Chicken Cheese dip anytime we would have a get together, after soccer hang out, or game night, so I’ll give him the credit for this blog šŸ˜‰

Slow Cooker Buffalo Ranch Chicken Dip - The Magical Slow Cooker

INGREDIENTS

  • 2 (10 ounce) cans chunk chicken, drained
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup Ranch dressingĀ 
  • ¾ cup Frank’s Hot Wing sauceĀ 
  • 1 1/2 cups of shredded cheese

INSTRUCTIONS

Drain the chicken and pull apart with fork. I usually put the pulled/chunked chicken on one side of the crock pot and the 2 blocks of cream cheese on the other side, then top the chicken with the 3/4 cup of sauce and top the cream cheese with the cup ranch. I feel like by putting the wing sauce on the chicken it kind of marinates through, but that could all be in my head. Cook on medium for about an hour or until melted. Once the cheese is melted stir and add the shredded cheese, mix well and cook for another hour on low. When ready serve with tortilla/Frito chips, crackers (chicken flavored are really good with this) or if you like celery, celery sticks I’m sure would go great – but I am not a fan. I hope you enjoy this easy and yummy recipe as much as we do!
