Do you like playing little pranks on your kiddos? I do!! Nothing scary or pretending to be hurt, just something super cheesy and cute- for those you know me know I am a PUNNY person! These are two April Fools pranks I have done to the goobers in the past- Made them “BrownEs” for dessert and “Cupcakes” for Dinner. I’m not sure what I’m going to do this year… do you have any ideas? Come back to see what I decided on… feel free to use these ideas if you want to play the prank as well. Be sure to let me know how it went if you do!
Cupcakes for dinner were really meatloaf and mashed potatoes! Don’t forget the cheese sprinkles! I made individual meatloaves in the cupcake pan, then topped with mashed potatoes using a piping bag- be sure to let the mashies cool before piping! I learned the hard way ha..ha..
Being stuck inside during this quarantine won’t stop us from having fun! Brayklee was supposed to be going on a Field Trip to the Aquarium… well…Welcome to our Aquarium! I stayed up way past my bedtime and decorated their “Home-school” area like an aquarium. I found a virtual field trip of the Seattle Aquarium and a SC Sea ? Hospital video! We read the book “Only One You” by Linda Kranz, then painted unique fish rocks. The goobers were so excited when they came downstairs in the morning. I usually put streamers up for the kids birthday so when Jax came down he was like “who’s birthday is it?” Brayklee and JayceeRae were in awe, they went around and checked out all my exhibits. Brayklee even made a scrap book entry about it, that made me feel really special! I hope they remember this for years to come.

Jelly fish exhibits, goldfish snacks
Alligator, seal, shell, sea turtle and snake exhibit
Who here loves an easy dinner? ME!!!! *waving arms frantically*
Working a full time job then coming home to just keep working is hard – MOM LIFE! But I would not have it any other way- Easy meal solutions are golden to me, less time in the kitchen, more time with my goobers! This Easy Peasy Santa Fe Cream Cheese Chicken is a huge hit with my family. I also prep freezer bags with the ingredients and store in the freezer for a quick pull later. All you have to do is throw it in the crock pot or InstaPot when desired.
INGREDIENTS
1 (2 1/2 to 3 pound) bag frozen chicken breast or tenderloins
1 (8-ounce) package cream cheese
1 (15-ounce) can black beans, drained & rinsed
1 (8-ounce) can corn, drained
1 (15-ounce) can Rotel tomatoes
INSTRUCTIONS
I always spray the inside of the pot with an oil spray or use a crock pot liner bag for easy clean up
Put the frozen chicken in the crock pot and add cream cheese on top of the chicken.
Drain and rinse the beans, drain the corn then add to the crock pot.
Add the Rotel tomatoes.
Cover and cook in your slow cooker on low for 6 to 8 hours. (When using the InstaPot I use the “Stew” option). Stir the ingredients every two hours, if possible, if not it’s fine too. You can shred the chicken when it is done, or just leave it whole.
Turn the slow cooker off and let your chicken sit for about 30 to 45 minutes before serving. Letting it sit will thicken it a bit, but it will be soupy. Serve over rice.
My goobers LOVE making these! Not only do they taste amazing, they are super simple to make and only require 3 ingredients! Jax even bakes them by himself (I help with the oven of course). Brayklee and Jason like to add frosting to them, but they are just as tasty without. Let me know how you like them!
INGREDIENTS
1 18.25 oz box of cake mix any flavor
2 eggs
1/3 cup vegetable oil- I use coconut oil when I have it
frosting, sprinkles, powdered sugar optional
INSTRUCTIONS
Heat oven to 375.
Mix cookie ingredients together.
Roll cookies into golf-ball sized balls and place them onto cookie sheet.
Cook for 7-9 minutes or until the edges start to brown.
Hey y’all! So, I’ve always wanted to try this whole blogging thing, and what better time to start than during this Covid-19 quarantine. “Hello from the Inside….” sang in my best Adele voice- tehe! Plenty of time, right? Or is it too much time??- ANY WHO! I plan to share my journey of being a God fearin, hubby lovin, Mama of three. Oh! And I cannot forget our dear Magnolia Mae, our 2-year-old Labradoodle!
Can y’all guess who hooked me up with Kristens.page? That’s right, Jason, that AmAzInG hubby of mine! Can you believe it’ll be 10 years come next month! Some things I plan on sharing are tasty recipes, DIY projects, vacations, randomness from my goobers, and anything to help make the daily struggles we face a little less stressful… like it will work huh, but hey worth a shot right, ha! So bear with me as I get started on this new adventure!
….off to sneak into our Quarantine Snacks….. until next time!
This photo is from last year 2019, after Social Distancing wears off we’ll get an updated one!
Today we weren’t able to have a party for Granddaddy with cake, ice cream, and family since we’re Social Distancing, but we did send him a Happy Birthday video! We also did a porch drop off to give him his gift and some homemade b-day goodies from the goobers. It was so nice getting to see them even if it was from the car windows.
For those who don’t know my granddaddy, he’s the Man! He’s a strong God fearing man who has taught me so much! He would take me fishing, to the flea markets, and don’t forget the DOLLAR STORE!! My nickname for him was “Chef”. He would always fix me anything I wanted to eat- My most common requests were: Beefaroni, red-eye gravy grits WITH cheese, grilled cheese sandwiches with the crust cut off OF COURSE, and he would also cut them into little stick pieces. He also makes the best Tropical Punch koolaid! He’s very ticklish and it makes me giggle every time I “get” him. He is one of the best Granddaddys out there and you know what he treats my goobers and Jason just the same. They pick up the goobers from school when they can and they play board games, go fishing in the pond …and…. go to the DOLLAR STORE! They have a blast.
The love he and my Grandma show us is undeniable. Granddaddy/Papa, you mean the world to our family, we love you bunches and wish you a wonderful 88th birthday!
